French potato salad


2 lbs new or boiling potatoes
Salt & pepper
2 tbl spoons dry white vermouth
2 tbl spoons beef bouillon
2 tbl spoons wine vinegar
6 tbl spoons olive oil
2 tbl spoons green onion
1 tsp Dijon mustard
Chopped fresh parsley

Boil potatoes in their skins until tender. Peel and slice while still hot. Place them in a shallow serving dish. Season with salt & pepper and pour vermouth and bouillon over all. Toss  gently and let sit for a few minutes. Make a French dressing by combining all remaining ingredients except parsley in a screw-top glass jar. Shake well. Pour dressing over potatoes. Toss gently and sprinkle with parsley. Serves 6-8.
